99% guilt free chocolate ganache cake


99% guilt free because it is made with love and zero animal products.
(trust me you won't miss them with this recipe)
and the 1% of guilt... is all on you.

chocolate cake recipe

dry ingredients:
2 cups organic unbleached flour
1/2 cup organic unsweetened cocoa
1/2 cup organic sucanat
2 teaspoons (aluminium free) baking powder
2 teaspoons (aluminum free) baking soda
1 teaspoon sea salt

wet ingredients:
1/2 cup organic canola oil
1 cup organic vanilla almond milk
1/2 cup water
1 cup organic maple syrup
1 tablespoon chocolate extract ( i didn't have so i used organic vanilla extract instead)
2 teaspoons organic apple cider vinegar

preheat oven 350. oil two 9" round cake pans ans set aside ( i used square glass pans lined with unbleached baking parchment paper)

1. sift flour, cocoa, sucanat, baking powder, baking soda and salt into a large bowl

2. in a seperate bowl, mix together the oil, almond milk, water, maple syrup, chocolate extract & vinegar

3. pour wet ingredients into the dry and stir until incorporated

4. divide the batter evenly between the two prepared pans, and bake for 18-22 mins, until a toothpick inserted into the center of the cake comes out clean. cool the layers in their pans on racks for 10 mins, the remove from the pans. cool to room temperature on the racks before frosting.

while cake is baking chocolate ganache can be made.

choclate ganache frosting ( make first so it can set)
2 cups vegan chocolate chips ( i use semi sweet)
1 cup vanilla almond milk

1. put the chocolate chips in a heat proof bowl ( i use glass)

2. slowly heat the almond milk to the boiling point.
pour over the chocolate chips and let sit for 1 - 2 minutes
whisk the chips and milk together well for about 2 minutes.

3. chill for at least 1 1/2 hours, until solid

4. frost the cake: place layer on a cake plate
frost the top with a 1/2" layer
then top with the 2nd layer
frost the sides and then the top of the entire cake.

this chocolate ganache cake is best served slightly heated with a scoop of non-dairy ice cream or rasberry sorbet .
... mmm mmm GOOD!

  1. This cake is delicious. I fed it to my children and they loved it too....They wanted more after it was all gone. Yummy and healthy... you wouldn't know.

    it is still not the best thing to choose to eat but if you must have cake... this is the way to go... no eggs, no dairy and no refined sugar.
    and you would NEVER know it!
