move over eggs & bacon... make room for a healthy conscious breakfast


When I first made the choice to eat consciously I asked myself how am I going to not eat my traditional "go to" meal??? which any of my close friends will know for me... it was eggs and bacon. my favorite meal of the day! In which I ate every single day of my life and if I skipped it all hell would break loose. I just couldn't function... I HAD to have my breakfast.

Well guess what, it has been a long long time since that day.. and I have to say it was hard at first.. but just like anything that you are used to.. when its not there you notice. As soon as you have some sort of a replacement you can cope with your "loss" and soon than later if your replacement is good... soon after that your replacement seem more like the norm rather than what you were used to. and now the thought of me eating an egg...(ugh...vomit) don't let not get me going off in that direction. let's stick to my main message....which is finding a good replacement.

Once I found a replacement for anything in my life that was in need of replacing. such as the food I ate, my personal care products, my cleaning products and even my enviroment..( friends... no offense) if the replacement was good then I never even thought about what i gave up. some things took longer than others but I never let a bad experience with one thing keep me from the rest. and slowly but surely one after the next I am satisfied with all of my choices.

Here is my replacement for eggs and bacon... The union of tofu and vegetables makes for a tasty breakfast. Create new flavor combinations by adding different seasonal vegetables and spices. The nutritional yeast gives this recipe a rich flavor, and the tumeric adds a bright yellow color.

Use ALL ORGANIC ingredients will make this breakfast free of pesticides and it is also free of any animal products and or guilt.

BREAKFAST TOFU SCRAMBLE

Ingredients:1 (14oz) block firmorganic tofu
3 tablespoon organic extra virgin olive oil
1 med organic onion, diced3 cloves organic garlic, minced
1 med organic red bell pepper seeded & diced3/4 cup of shredded organic carrot
1 cup diced organic zucchini3 tablespoons organic tamari1/4 cup nutritional yeast
1 teaspoon Himalaya sea salt
1/4 teaspoon spike
1/2 teaspoon organic tumeric
1/4 teaspoon organic paprika

1. Press tofu to remove all excess water.
2. In a medium pan heat oil, then saute the onion garlic until soft.
3.Crumble tofu into a bowl add the nutritional yeast, tumeric, paprika, tamari and mix together then
4.add tofu mixture to pan. Saute for 1 min, add remaining ingredients and saute until tofu becomes slightly brown.Variations: you can punch up the flavor and nutrition by adding 1/2 cup of chopped spinach toward the end of the cooking.

We use no butter... oh no... only "earth balance" butter substitute. and or some organic apple butter ( no sugar added) or all natural jam or jelly (with no sugar added) for our toast. mmmm

Last but no least we drink organic naturally caffeine free rooibos tea. and we add a little organic unsweetened almond milk and to sweeten.... agave ... it is from a catus and is low glycemic. suitable for for everyone including diabetics.

I hope that if you read all of this... and that some of this sticks with you and next time you make a choice you make it consciously.

keeping it on the surface are you.. That's cool... but remember you were the first person to tell me to cut eggs out of my diet... remember??? I just wish I had done it sooner... including nasty dairy. which by the way my friend... cut that nastiness out of your diet and get a hold of your health! what are you waiting for? listen to your body already and all of the knowledge you have in that noggin of yours.

Yea!I can vouch for the yummy tofu breakfasts you make!Remember our days last summer in the Topanga mansion, and you would make us all scrambled tofu with spinach and mushrooms!! Yummy..my boys loved it too..all 4 of them...
